Roquefort AOP Société is made with raw sheep's milk collected from local farms in Aveyron and 5 neighboring departments. The ewes are raised in the wild (as soon as the weather permits) and fed without GMOs (<0.9%), mainly grass, fodder and cereals from the farm. The milk collected is then delivered to our 2 Aveyron cheese factories. Then the Roquefort is matured in our natural cellars, built in the cliffs of the village of Roquefort-sur-Soulzon in Aveyron (in accordance with regulations). Our cellars can be visited all year round.
